Holiday Mini Cheesecakes!!

I’m posting on the go today! So hopefully things don’t look funny. Either way…here you go!

I absolutely LOVE cheesecake! My sister is such a great cook. She made this last year for Thanksgiving & I was excited when she shared her recipe with me!
It’s super easy & I’m sure you will enjoy it as much as my family & I do!

2 (8 ounce) cream cheese
3/4 cup white sugar
1 (15ounce) pumpkin purée
1 1/4 tsp ground cinnamon
½ tsp ground nutmeg
½ tsp ground ginger
2 eggs (large)
1/4 tsp salt
2 pie shells (homemade or store bought, your choice) I used graham crust.

Preheat oven to 350
Beat together cream cheese, sugar, pumpkin, & spices. Add eggs in one at a time, then add salt, beat until creamy. Pour evenly into the two pie shells and bake for 50 minutes or until the knife inserted in the middle comes out clean. Let cool then to with whip, if desired.
I cooked mine about 5 minutes longer & the knife never came out clean. I let it stand on the counter to cool & then put in the fridge for about an hour & it was perfect!
